Doug Evans
Executive Chef | Partner | Director
A highly accomplished chef and hospitality leader, Doug brings over 30 years of culinary experience across the U.S., from Buffalo and Las Vegas to Hawaii and Lake Powell. His expertise spans fine dining, kitchen leadership, and hospitality software systems. Doug has operated his own restaurants and led high-performing teams with major operators, including Aramark. At The Red Lion, he will set the standard for food quality and innovation.

Jimmy Platt
General Manager | Partner | Director
Jimmy's hospitality roots are firmly planted in the UK, having served in senior roles with Scottish & Newcastle in Prestatyn and Jersey, and later with Bourne Leisure at Greenacres in Porthmadog. In the U.S., he successfully transitioned to entrepreneurship — first with Vegascape, a construction company, and later with Arcpoint Labs in Las Vegas, where he led a team that won both local and national awards for excellence in customer service. He will be the Designated Premises Supervisor. Jimmy’s leadership is grounded in operational excellence and customer first and foremost thinking.

Alan Read
Director
Alan offers four decades of hospitality expertise, having served as General Manager for numerous holiday parks across the UK, including New Pines in Rhyl. He now owns a live entertainment business serving venues across North Wales and regularly consults as interim GM for national operators. As a Personal Licence Holder and UK resident, Alan has been instrumental in the project's early-stage execution and regulatory compliance.

Peter Bibby
Customer Experience Advisor
A successful entrepreneur and former owner of Kinmel Paper Supplies, Peter has transitioned into high-end hospitality roles, including Concierge at the luxury Palé Hall Hotel and service at Gladstone’s Library. His experience with affluent clientele and hands-on involvement in The Red Lion's renovation make him a key contributor to both brand positioning and execution.

Melanie Platt
Partner | Director
A Nurse Practitioner based in Flagstaff, Arizona, Melanie brings both clinical precision and hospitality passion. Prior to her medical career, she worked in top Las Vegas establishments including the renowned Pasta Mia and Del Frisco’s, developing a strong understanding of upscale dining service and guest expectations. Fluent in Welsh and deeply connected to her Welsh heritage, she adds cultural depth and operational insight.

Frances Platt
Partner | Director
Currently a flight attendant with United Airlines, Frances has mastered the art of guest interaction, safety, and adaptability at the highest level. Her service ethos and attention to detail will help shape the customer journey at The Red Lion, ensuring every guest encounter is memorable and meaningful.
